We had this treat at Family Night last night. It's my friends recipe and is very yummy : ) It's one of my husband's and kid's favorites. This is treat you can make and bring to a party and people won't know it has whole wheat flour and is sweetened with Honey

Pumpkin Roll Cake (I like to call them pumpkin bars)- Jennifer Edgecomb
1/2 cup butter, softened
1 cup honey
1 15 oz. canned pumpkin
2 tsp vanilla
4 eggs
In a bowl mix the above ingredients by hand until well mixed.
1 tsp baking powder
1/2 tsp baking soda
Sprinkle these on the wet ingredients and let sit for a few minutes
Stir in the remaining ingredients
1 1/2 cups WW flour
1/4 tsp salt
2 1/'2 tsp pumpkin pie spice or a combination of cloves and nutmeg (I use 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp cloves.
*** Optional - add 1 cup raisins or 1/2 cup nuts
Pour into a greased cookie sheet (11x36).
Bake at 350 for 20-25 minutes or until top springs back when touched - don't
over cook. Let cool.
Make the frosting.
8 ozs cream cheese, softened
1 tsp vanilla
1/3 cup honey or maple syrup
To make the frosting: beat all ingredients with a hand mixer.
When completely cooled, frost, sprinkle with chopped nuts (walnuts
or pecans are yummy!) and cut into bars.
It is best to put it in the fridge for a few hours before eating - if you can wait
that long :0)
